Please upload your log file from c:\ProgramData\digiCamControl\Log\app.log

In "A" mode the camera take care of shutter speed, based on aperture settings. If you want to set both, you should set camera in "M" mode.
The Capture Name can be used in file name template

Nothing can be done, this is coded in camera firmware even for high-end camera models. I get some reports when the camera recording video then the live view quality is same as video quality, but i can't confirm this

Which version of DCC did you try with EOS R5C ? The latest one released about 2 week ago use latest canon SDK. No need to modify the application code just replace Canon EDSDK files with new one. Then use from application File->Settings->Locate log file
